Apple Lamb Sausage and Eggs

Here's what you will need to make my Apple Lamb Sausage and Eggs recipe.
- 3 eggs scrambled(1 yolk, 2 whites)
- 1 homemade Apple Lamb Sausage
- 1 tbsp parsley •Spices: salt & pepper
- 1 lb ground Lamb
- 1/2 apple, peeled & finely diced
- 1 Tbsp thyme, finely chopped (or use 2 Tablespoons dried thyme)
- 3 Tbsp fresh parsley, finely chopped
- 1 Tbsp fresh oregano, finely chopped (or use 2 Tablespoons dried oregano)
- 2 teaspoons garlic powder
- salt and pepper to taste
- 1 tbsp coconut oil
- Place 3 tablespoons of coconut oil into a skillet on medium-high heat
- When the oil is hot add the apples, thyme, parsley, and oregano until the apples soften. About 7-8 minutes
- Remove from heat and let cool for 5 minutes
- Mix the meat with everything in the skillet, as well as the garlic powder, salt and pepper (including any leftover oil)
- Preheat oven to 425 degrees
- Scoop out about 1/4 cup of the meat mixture (makes about 8) and shape into long sausages
- Place sausages on a baking tray
- Bake at 425 for about 20 minutes
