Hot, Hearty, Healthy Quesadilla by Lonnie B.

August 21st was Day 6 of Beast Sports Super Test and another cardio day. I won't go into many cardio details - really, how excited could a post about running up stairs be?  Instead, this is a little bit more about FOOD!  I try to maintain as clean of a diet as possible.  Regardless of what supplements you're using, nutrition is a HUGE, HUGE part of a successful health/fitness program.  You can take all the supplements in the world, but if you eat garbage, your results are going to be garbage. On a higher carb/higher fat day, or if you follow an "If it Fits in Your Macros" sort of plan, this quesadilla is hot (spicy), healthy and nutritionally well balanced.  It's a bit higher on the fat side with the whole grain tortillas and cheese - but if you're eating a balanced diet, this is really nothing to worry too much about.  You could always sub low-fat cheese, but when I'm eating 3300-4500 calories a day, I need a good amount of fat grams. Ingredients: 2 "Mission" whole grain tortillas 4oz cooked boneless/skinless chicken breast (seasoned with just a bit of salt/pepper) 1oz Habanero Cheddar Cheese 2 tbsp of Ms. Renfro's Ghost pepper salsa Prep: Spray a large non-stick frying pan with non stick spray (you could use salted butter, but that'll add fat), and set the heat on medium-high.  Cube the chicken breast into small pieces and place in a bowl.  Add the 1oz of cheese and 2tbsp of Ghost chile salsa to the bowl and mix well.  Spread the chicken/cheese/salsa mix out on one tortilla, place the other tortilla on the top and cook it up!  Flip it after a few minutes on one side and let it sit a few minutes on the other side.  When it's all said and done, it should look something like this:  width= Nutritional Info: Calories: 525 Fat: 19g Carbs: 49g Fiber: 10g Protein: 39g Overall, this meal is 32% fat, 37% carbs, 29% protein.   Like I noted above, it's a bit high on the fat side, but if you're eating well balanced foods, this should fit in as a tasty option if you like Quesadillas.  The flavor is great, and if you're a fan of spicy foods it's right up there with the habanero cheese and ghost pepper salsa.
