Tabitha's Meatloaf Cups

Meatloaf was a childhood favorite and a dinner I always looked forward to. In this recipe I switched the beef to turkey, the regular breadcrumbs to a gluten-free version, and a loaf for single serving cups. None the less, it is still an enjoyable and healthy comfort dish that is a mainstay in my monthly family meal plan. I can only hope your family enjoys these meatloaf cups as much as mine! Serve it with a healthy carbohydrate and veggies, or take it with you for a quick on-the-go snack.
Tabitha's Meatloaf Cups Ingredients:

- 1 lb ground turkey
- 1/2 cup Italian breadcrumbs
- 1/4 cup parmesan cheese
- 1/2 tablespoon “better than bouillon” beef base
- 1 whole egg
- 1 tablespoon all natural ketchup
- 1 tablespoon low calorie barbecue sauce
- Mix all ingredients together well
- Place 1/2 cup mix into cupcake foils in cupcake tin
- Bake at 350 for 30-35 minutes or until fully cooked
- Let sit 5 minutes and then serve.
