Protein Pumpkin Muffins

I am a pumpkin fiend, but I can’t be eating pumpkin pie year round. So I came up with a healthy alternative I can have in place of my favorite Thanksgiving staple, Beast Whey Protein Pumpkin Muffins. When I get around to making these I either have them as a post-workout snack or with breakfast. They are low in sugar and provide me with a great protein boost, so they are really great for any time of day.
The added chocolate or vanilla flavor from the Beast Whey goes great with the pumpkin flavor, making them hard to resist. To be totally honest, I have a hard time making them last and usually end up eating all of them the same day I make them. Beast Whey Protein Pumpkin Muffins - Ingredients:
- 2 scoops vanilla or chocolate Beast Whey powder
- 1 cup dry oats
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 egg whites
- 1/2 cup canned organic pumpkin
- 1/4 cup applesauce, unsweetened
- Stevia (or your favorite sugar-free sweetener)
Directions:
1. Preheat oven to 350 2. Mix all dry ingredients in bowl 3. Mix all wet ingredients in a separate bowl 4. Combine dry and wet ingredients and blend well 5. Pour into muffin tins and bake for 10 minutes For more healthy and delicious recipes, check out some of the others posted on this website here.
